Daniel is originally from Guadalajara, in central Spain, and 100% Alcarrian, direct and rational. He trained at the Gambrinus School of Hotel Management and Catering in Madrid.
“As a chef, I’m a perfectionist; persistent, demanding and disciplined.”
He enjoys tradition, but believes in professionalism and the use of new technologies, and seeks to recover traditional recipes and stews.
“I love the street, the bars and the whole tapas scene. I like cuisine that’s honest, simple and focuses on the product.”
