Jean Christophe Poirier grew up in St–Jerome, Quebec, and attended culinary school in Montreal.
After a year of working at a classic French restaurant he landed at Toqué (cooking shoulder to shoulder with Angus An).
His next stop was Vancouver and Lumière’s vaunted million-dollar kitchen, where he assembled 10-course tasting menus and a dozen more à la carte items for the bar. “Toqué was never slammed,” he recalls. “Lumière was slammed.”
A culinary powerhouse whose creativity and technical skill have made his restaurants a delight.
Trained in classical French and Québécois haute cuisine that is rooted in seasonality and terroir, Chef Jean-Christophe Poirier has had an impressive breadth of gastronomic accomplishments.
He is a star and major influencer in the Vancouver food scene with a series of award-winning restaurants including St. Lawrence, where he showcases his Québécois roots and classic French cooking.
His serious talent and impeccable credentials were most recently recognized when St. Lawrence won a pair of gold medals.
